brot is a WICKED subsidiary of Hospitality Matters Pty Ltd (a hospitality project management company), whose
concept was conceived in October 2008. The search for a suitable pilot store in the Brisbane CBD, ended in
February 2009, with the consequential opening in May 2009 of its very popular Adelaide St store.
Ex swiss pavilion Expo 88 restaurant director Heinz Frunz (director Hospitality Matters) has relocated to
Brisbane to ‘enjoy being part in another wave of Brisbane’s very positive gastronomic evolution’. Heinz has

The day begins at brot, those who walk by know the aroma, with hard-to-resist croissants, swiss chocolate
filled croissants, and pastries. brot’s WICKED barista often has an early morning queue, waiting customers
happy to chat while their fresh grind coffee or loose leaf tea is being tailor-made.
Gourmet rolls and bread loaves are next as brot’s ovens gear up for the morning trade. Those in the know,
know, the best pretzel is one straight out of the oven!
Lunch is BIG at brot, not only retailing fresh and healthy PRESERVATIVE FREE filled bread products from the
store but there is a growing secret army of brown and orange shirts scurrying across the inner city, delivering
platters of filled gourmet rolls and pastries to hungry boardrooms and offices to a time schedule
that would impress the swiss rail service.
